These converted plant tissue substances are nutritionally adjusted by adding missing nutrients and balancing other nutrients present to provide a food which is suitable for human consumption. Meat extenders, for instance, have been used for the purpose of adding them to ground meats to increase their quantity without considerably changing the taste, texture, appearance and nutritional values of the meat. An acceptable meat extender for this reason should be capable of Ewing added to ground meat at levels of up to 50 per cent or more by quantity without considerably modifying the quality of the natural product.An acceptable meat extender should be developed from a relatively inexpensive and plentiful plant tissue source by means of an easily practiced process. The meat extender should also be capable of being mixed with a variety of meats. The meat extender should also be capable of resembling the taste, texture, appearance and nutritional value of meats. And finally, an acceptable meat extender should be sufficiently delicious to make it appealing for human consumption even if it is not mixed with any meat. In the Philippines, home-grown plants like the cassava leaves have been investigated as excellent sources of meat extenders.
Locally, Cassava is an accessible crop. It can be easily found in the country and all though out Laguna in most times of the year. But while this crop is abundant, only its tubers are fully utilized and the leaves left wasted. The cassava leaf is a nutritious and edible part of the plant; hence, this study. Finally, the cassava leaf as a wasted part of the plant is utilized for its potential as a nutritious and natural extender to meat. Page 10 Scope and Delimitation of the Study The study was conducted at Trace College, High School Department Building, Los Bassos, Laguna with the constant supervision of the researchers’ science coacher.
